Berkel Slicer: The Classic Food Industry Tool
[Posted on March 27, 2013 by Demetri Dale]
This all changed with the introduction of a relatively simple mechanical device. Welhelmus Adrianus Van Berkel was a Dutch butcher with a love of inventions. He found that demand for thinly-sliced meat was high, but supplying that demand was difficult. The solution to this problem was a machine that sported a stationary concave blade, combined with a plate that moved the meat toward its sharpened edge. This device replicated the motions of a knife and a trained hand, but operated far more quickly than even the best butcher, and thus the seeds of the Berkel slicer were first developed.
